Ingredients
  

For the dough
  • 1 package store bought pie dough Homemade dough can also be used for a buttery flavor.
For the filling
  • 3 cups fresh strawberries, sliced Frozen strawberries may be used if thawed and drained well.
  • 1 small apple, grated Helps to thicken filling and adds natural pectin.
  • 1-1.5 tablespoons tapioca flour Thickens the strawberry juices.
  • 1/4 cup sugar Adjust to taste to bring out the berry flavor.
  • 1 egg for egg wash Gives a golden crust.

Method
 

Preparation
  1. Preheat the oven and place a baking sheet in the oven to heat.
  2. Roll out the dough into a roughly circular shape on parchment paper.
  3. In a bowl, mix together the sliced strawberries, grated apple, tapioca flour, and sugar. Let it sit for 5 minutes.
Assembly
  1. Spoon the fruit mixture onto the center of the dough, leaving a 2-inch border.
  2. Fold the edges of the dough over the filling, pleating as needed.
  3. Brush the edges with the egg wash.
Baking
  1. Slide the parchment with the galette onto the preheated baking sheet.
  2. Bake until the crust is golden and the filling is bubbly, about 35-40 minutes.

Notes

Galette can be prepared ahead of time. Keep the dough and filling ready separately and assemble before baking. Leftovers can be covered and refrigerated for up to 3 days.
