Ingredients
  

For the Jello Shots
  • 1 box strawberry flavored gelatin (3 oz)
  • 1 cup boiling water
  • 1/2 cup cold water Adjust based on desired strength
  • 1/2 cup white rum Adjust to taste
  • 1-2 tablespoons lime juice Fresh is best, bottled is fine
  • 1/2 cup strawberry puree or finely chopped strawberries
  • 1 tablespoon sugar or honey Optional, if strawberries are not sweet

Method
 

Preparation
  1. Set out your shot cups on a baking sheet for easy fridge transport.
  2. In a bowl, add the strawberry gelatin powder.
  3. Pour in 1 cup boiling water and whisk for about 2 minutes until the powder is fully dissolved.
  4. Stir in the cold water, rum, lime juice, and strawberry puree. Mix until everything looks evenly combined.
  5. Carefully pour the mixture into the shot cups, filling them about three-quarters full.
  6. Refrigerate for at least 3 to 4 hours, but preferably overnight for the best set.
  7. Before serving, top with a tiny piece of strawberry or a little dollop of whipped cream.

Notes

These shots can be made a day ahead and stored in the refrigerator. Best consumed within 3 to 4 days. For a vibrant color, use sweet-smelling strawberries. Avoid fresh pineapple as it can prevent the gelatin from setting.
