Ingredients

For the crust
  • 2 cups all-purpose flour For a flaky crust.
  • 1 cup unsalted butter Cold, cut into cubes.
  • 1/4 cup granulated sugar Optional, for sweetness in the crust.
  • 1/4 cup ice water To help the dough come together.
For the filling
  • 6 cups fresh ripe peaches Peeled and sliced.
  • 3/4 cup granulated sugar To sweeten the filling.
  • 1/4 cup all-purpose flour For thickening the filling.
  • 1 teaspoon cinnamon Optional, for added flavor.
  • 1 tablespoon lemon juice To enhance the peach flavor.
  • 1 tablespoon butter To dot on top of the filling before baking.

Method

Make the Crust
  1. In a large bowl, combine the flour and sugar. Cut in the butter until the mixture resembles coarse crumbs.
  2. Stir in the ice water, a tablespoon at a time, until the mixture forms a ball.
  3. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Prepare the Filling
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine the sliced peaches, sugar, flour, cinnamon, and lemon juice. Toss until evenly coated.
Assemble and Bake
  1. Roll out the chilled dough on a floured surface and place into a pie dish.
  2. Fill the crust with the peach mixture and dot with small pieces of butter.
  3. Cover with another layer of dough, if desired, or create a lattice top.
  4. Bake in the preheated oven for 45-50 minutes or until the top is golden and the filling is bubbling.
  5. Allow to cool before serving to let the filling set.

Notes

Serve warm with vanilla ice cream or whipped cream. Allow the pie to cool for several hours before slicing for cleaner cuts.
