  • 2 tablespoons Butter For flavor and searing.
  • 2 tablespoons Olive oil For searing chicken and potatoes.

  • 1 teaspoon Paprika Season chicken.

Method
 

Preparation
  1. Pound the chicken to even thickness and season both sides with salt, pepper, and paprika. Let it sit for 10 minutes.
  2. Heat a large skillet over medium-high heat. Add olive oil and butter.
  3. Add potatoes in a single layer and let them cook for 4 to 5 minutes without stirring until crisp. Flip and cook another 4 minutes until golden.
  4. Remove potatoes to a plate and season with salt.
Cooking
  1. Add a touch more oil to the skillet if needed and lay down the chicken. Cook until golden, about 4 to 6 minutes per side. Ensure the internal temperature reaches 165 F before removing to rest.
Building Garlic Butter
  1. Reduce heat to low and add butter and minced garlic. Stir for 30 seconds, ensuring garlic doesn’t brown.
  2. Toss in potatoes, add most of the Parmesan, and a pinch of Italian seasoning. Stir gently.
Finishing and Serving
  1. Slice the chicken and return to the skillet. Toss lightly with potatoes and garlic butter. Top with additional Parmesan and fresh herbs.
  2. Serve with lemon wedges for a bright finish.
