Red White and Blue Trifle with Fresh Berries

Ingredients
  

Cake Layer
  • 1 pound pound cake or angel food cake, cut into 1 inch cubes Sturdy cake will hold up better.
Berries
  • 2 to 3 cups strawberries, hulled and sliced Can toss with a teaspoon of sugar if not sweet.
  • 1 to 2 cups blueberries Keep them whole.
Cream Layer
  • 8 ounces cream cheese, softened Blend with other ingredients for creamy layer.
  • 1 cup powdered sugar Use less for a less sweet filling.
  • 1 teaspoon vanilla extract
  • 2 cups whipped topping or 2 cups heavy cream whipped to soft peaks Fold into cream cheese mixture.
Optional Ingredients
  • lemon zest For added flavor.
  • a pinch of salt
  • spoon of strawberry jam For extra flavor.

Method
 

Make the creamy layer
  1. Beat the cream cheese, powdered sugar, and vanilla until smooth.
  2. Fold in the whipped topping or whipped cream.
  3. Taste it. If it needs a pinch of salt, add it.
  4. If you want it brighter, add a tiny bit of lemon zest.
Prep the berries
  1. Slice the strawberries and keep the blueberries whole.
  2. If strawberries are not super sweet, toss with a teaspoon of sugar and let them sit for 10 minutes.
Start layering
  1. Put a layer of cake cubes in the bottom.
  2. Add a layer of the creamy filling.
  3. Add strawberries, then blueberries.
  4. Repeat until you reach the top of your bowl.
Finish the top
  1. End with a thick white layer and arrange berries in stripes or a loose flag look.
Chill
  1. Give it at least 2 hours in the fridge so it sets up and scoops nicely.

Notes

Consider keeping a little extra whipped topping aside to add a fresh top layer just before serving for a newly made look. Keep berries dry to avoid a watery base.
