Ingredients
  

Chutney Ingredients
  • 2 to 3 cups chopped ripe pineapple Fresh is best
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 small chili or 1/4 teaspoon red pepper flakes (optional) Adjust for spice preference
  • 1/3 cup apple cider vinegar
  • 1/3 cup brown sugar More or less to taste
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin (optional but nice)
  • Juice of half a lime

Method
 

Cooking
  1. Add onion to a saucepan with a tiny splash of water and cook for 2 to 3 minutes to soften.
  2. Stir in garlic and ginger for 30 seconds to release the aroma.
  3. Add pineapple, vinegar, brown sugar, salt, and your chili or flakes.
  4. Bring it to a gentle simmer, then cook for 12 to 18 minutes, stirring occasionally.
  5. When it looks jammy but still has small pineapple pieces, turn off the heat.
  6. Finish with lime juice, cool it down, then jar it up.

Notes

For best flavor, let chutney sit for at least 30 minutes before serving. It pairs well with grilled chicken, pork chops, or cheese boards. Adjust sweetness or tanginess according to taste.
