  • 1 cup grated Parmesan cheese Freshly grated is recommended for best results.
  • 2 tablespoons olive oil Use enough to coat the potatoes lightly.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.
Herbs and Seasonings
  • 1 tablespoon fresh parsley Can also use fresh rosemary or thyme.
  • 1 teaspoon dried Italian seasoning If using dried herbs, add at the beginning.

Method

Preparation
  1. Preheat the oven to 425°F (220°C) and prepare a large baking sheet.
  2. Wash, cut, and dry the potatoes thoroughly. Cut pieces to a similar size for even cooking.
  3. In a bowl, combine the potatoes with olive oil, salt, pepper, Parmesan cheese, and herbs, mixing until evenly coated.
Roasting
  1. Spread the coated potatoes in a single layer on the prepared baking sheet, ensuring they are not crowded.
  2. Roast in the preheated oven for 30 minutes, flipping halfway through to ensure even browning.
  3. If desired, add additional Parmesan halfway through roasting for a thicker crust.

Notes

Serve with dipping sauces like ranch or garlic aioli. Can prep potatoes a day in advance and store in the fridge. Excellent reheated in the oven or air fryer for crispiness.
