  • 1 pound shrimp, peeled and deveined Fresh or frozen, thawed and patted dry.
  • 8 ounces fettuccine pasta Fresh or dried.
  • 2 cups Alfredo sauce Homemade or store-bought.
  • 1 cup Parmesan cheese, grated For thickening the sauce, as needed.
  • 2 tablespoons olive oil For cooking the shrimp.
Optional toppings
  • 2 tablespoons fresh parsley or basil, chopped For garnish.
  • 1 lemon lemon juice, freshly squeezed To taste, for brightness.

Method
 

Cooking shrimp and pasta
  1. In a large pan, heat olive oil over medium heat.
  2. Add the shrimp to the pan and cook until they turn pink and curl into a 'C' shape, about 2-3 minutes per side.
  3. Remove the shrimp from the pan and set aside.
  4. In the same pan, add fettuccine and Alfredo sauce, bring to a simmer, and cook until the pasta is al dente, stirring occasionally.
Combining and serving
  1. Once the pasta is cooked, return the shrimp to the pan and stir to combine.
  2. If the sauce is too thick, sprinkle in a bit of Parmesan cheese or a splash of milk to reach desired consistency.
  3. Serve immediately, garnished with parsley or basil and a squeeze of lemon juice.

Notes

If you're short on time, feel free to use store-bought Alfredo sauce and add in any extra ingredients to suit your taste. For a 'plain' version, simply omit the shrimp.
