Ingredients

For the Crust
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed May also use lard for a more traditional flavor.
  • 1 tsp salt Adjust according to preference.
  • 5-7 tbsp cold water Add more if necessary for dough consistency.
For the Filling
  • 4 cups cherries, pitted (can mix sweet and sour) Montmorency or Bing cherries recommended.
  • 1 cup granulated sugar Adjust based on cherry sweetness.
  • 2 tbsp cornstarch Can substitute with arrowroot or tapioca starch.
  • 1 tsp vanilla extract Enhances flavor.
  • 1 tbsp lemon juice Adds brightness.

Method

Preparation
  1. In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
  2. Stir in water, one tablespoon at a time, until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic, and refrigerate for at least 30 minutes.
Making the Filling
  1. In a separate bowl, combine cherries, sugar, cornstarch, vanilla extract, and lemon juice. Toss to coat and let sit for 10 minutes.
Assembling the Pie
  1. Preheat the oven to 425°F (220°C). Roll out one disk of dough on a floured surface and fit it into a 9-inch pie dish.
  2. Pour the cherry filling into the crust and dot with butter.
  3. Roll out the second disk of dough, place it over the filling, and seal edges. Cut slits in the top crust to allow steam to escape.
Baking
  1. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling. Cool before slicing.

Notes

Serve with vanilla ice cream or whipped cream for an extra treat. Make sure to let the pie cool to set the filling.
