Homemade Turkey Gravy

Ingredients
  

Main Ingredients
  • 1 cup Turkey drippings Skim fat, but save it.
  • 2 tablespoons Turkey fat or butter Used for the roux.
  • 2 tablespoons All-purpose flour For thickening the gravy.
  • 1 cup Broth (turkey or chicken)
  • to taste Salt Season to taste.
  • to taste Black pepper Season to taste.
Optional Ingredients
  • 1 splash Milk or cream For a creamy finish.
  • 1 teaspoon Onion powder Optional seasoning.
  • 1 teaspoon Garlic powder Optional seasoning.
  • pinch Poultry seasoning Optional seasoning.

Method
 

Preparation
  1. Pour the pan drippings into a measuring cup or fat separator. Let it sit so the fat floats.
  2. Spoon off the fat and set it aside. Do not toss it, as it is your flavor starter.
Cooking
  1. Put your roasting pan on the stove over medium heat (or use a saucepan if the roasting pan is too big).
  2. Add about 2 to 4 tablespoons of the reserved fat.
  3. Whisk in the same amount of flour. Keep whisking until it looks like a smooth paste.
  4. Let it cook for about 1 to 2 minutes to cook out the raw flour taste.
  5. Slowly whisk in the drippings plus broth, starting with a little stream. Continue whisking until smooth.
  6. Let it bubble gently until it thickens, usually 3 to 6 minutes.
  7. Season with salt and pepper to taste. Add a splash of cream for extra coziness if desired.

Notes

Gravy is ideal over mashed potatoes, in leftover turkey sandwiches, or any roasted vegetables.
