Ingredients
  

Main Ingredients
  • 8 oz block cream cheese, softened Use block cream cheese, not whipped.
  • 4 to 5 cups powdered sugar, plus extra for dusting Add gradually to avoid clumping.
  • 1/4 to 1/2 tsp peppermint extract Start with a small amount and adjust to taste.
  • 1 pinch salt Optional, but enhances sweetness.
  • Food coloring Optional and can be any gel variety.

Method
 

Mix the Dough
  1. In a medium bowl, mix the softened cream cheese until it’s smooth.
  2. Add peppermint extract and a pinch of salt if desired.
  3. Start adding powdered sugar one cup at a time, mixing as you go until you achieve a soft dough that doesn’t stick.
Color and Shape
  1. If coloring, split the dough and tint each portion as desired.
  2. Dust your hands with powdered sugar, roll small pieces into balls, and shape as desired with a fork or molds.
Dry and Store
  1. Place the mints on a parchment-lined baking sheet.
  2. Let them dry at room temperature until set, usually several hours or overnight.
  3. Store in an airtight container with parchment between layers.

Notes

These mints can be made 2 to 5 days in advance and can be frozen. Use gel food coloring for best results and ensure your cream cheese isn't too warm or whipped for the best texture.
