  • 1 lb ground turkey Can be substituted with ground chicken or a mix of pork and beef.
  • 2 medium sweet potatoes Can use regular potatoes or butternut squash if necessary.
  • 1 medium onion Chopped.
  • 1 medium bell pepper Chopped; can substitute with zucchini or carrots.
  • 2 cloves garlic Minced.
  • 1 can diced tomatoes Can use fresh diced tomatoes when in season.
  • 1 teaspoon smoked paprika Add more for extra flavor.
  • 1 teaspoon dried oregano Can substitute with thyme or other herbs.
  • 2 tablespoons olive oil Can substitute with avocado oil.
  • to taste salt

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onions and bell pepper, cooking until softened.
  3. Add ground turkey, breaking it up as it cooks until no longer pink.
  4. Stir in minced garlic and cook until fragrant.
  5. Add sweet potato cubes, smoked paprika, oregano, salt, and pepper.
  6. Stir in diced tomatoes and a splash of water if needed.
  7. Reduce heat, cover, and let simmer for about 15 minutes, stirring occasionally.
  8. Check the doneness of sweet potatoes; they should be fork-tender but not mushy.

Notes

Store leftovers in a covered container for up to four days. Reheat in the microwave or skillet. Add a fried egg on top for an instant brunch upgrade.
