Ingredients

For the Muffins
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup cocoa powder unsweetened
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup dark chocolate chunks or milk chocolate based on preference
  • 1 cup cherries fresh, canned, or frozen, pitted and chopped

Method

Preparation
  1. Preheat the oven to 400°F (200°C) and line a muffin pan with liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together the milk, oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined, being careful not to overmix.
  5. Fold in the chocolate chunks and cherries lightly.
Cooking
  1. Fill the muffin cups about three quarters full with the batter.
  2. Bake for 18 to 20 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  3. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For the best dome, do not overmix, fill the cups adequately, and consider letting the batter rest for 10 minutes before baking. Keep an eye on your muffins to avoid overbaking.
