Preparation
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, and salt.
- In another bowl, beat together the eggs and then add melted butter and milk, mixing well.
- Pour the wet ingredients into the dry ingredients and stir until just combined; lumps are okay.
- Fold in cherries and chocolate chunks gently.
Baking
- Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Let muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
For gooey muffins, avoid overmixing and don’t overbake. Experiment with using different types of cherries, and try topping muffins with extra cherry pieces before baking.
