Preparation
- Clean the mushrooms by wiping them with a damp paper towel. Do not soak in water.
- Set up a breading line: one bowl with flour, cornstarch, salt, pepper, garlic powder, and paprika; another bowl with whisked eggs and milk; a third bowl with panko or breadcrumbs.
- Roll the mushrooms in the flour mix, dip in the egg, then press into the panko. Set them on a plate.
Cooking
- Heat the oil in a deep pot to about 350°F. Drop in a tiny breadcrumb; if it sizzles and floats, the oil is ready.
- Fry the mushrooms in small batches for about 2 to 3 minutes, or until deep golden brown. Flip once if necessary.
- Once finished frying, move the mushrooms to a rack or paper towels and sprinkle with salt while still hot.
Notes
Keep mushrooms dry for maximum crunch, and use a rack for draining to prevent steaming. Season immediately after frying to enhance flavor.
