  • 1 lb Ground beef Use lean ground beef if preferred.
  • 32 oz Frozen tater tots
  • 1 medium Onion Optional, but adds flavor.
  • 2 cloves Garlic Optional, or use garlic powder.
  • 10.5 oz Cream of mushroom soup Can substitute with cream of chicken.
  • 1 cup Sour cream Adds creaminess.
  • 2 cups Shredded cheddar cheese Reserve half for topping.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Optional add ins (frozen corn, peas, green beans, chopped bell pepper) Mix in for added nutrition.

Method
 

Preparation
  1. Brown the ground beef in a skillet. Drain excess grease if necessary. Add chopped onion for the last few minutes if using.
  2. Season the beef with salt, pepper, and garlic powder if desired.
  3. In a bowl, stir together the cream of mushroom soup and sour cream. Then mix in about half of the shredded cheese.
  4. Add the cooked beef to the crock pot. Pour the creamy mixture over it and stir to combine.
  5. Arrange frozen tater tots on top in a single layer.
Cooking
  1. Cover and cook on LOW for 4 to 6 hours, until hot and bubbly.
  2. During the last 15 to 25 minutes, sprinkle the rest of the cheese on top and cover to let it melt.
  3. For extra crispiness, transfer to the oven or broil briefly.

Notes

For a variation, you can add veggies or swap the protein. To keep tots from getting too soft, add them for the last hour of cooking. Store leftovers for up to 3-4 days in the fridge.
