Preparation
- Brown the ground beef in a skillet. Drain excess grease if necessary. Add chopped onion for the last few minutes if using.
- Season the beef with salt, pepper, and garlic powder if desired.
- In a bowl, stir together the cream of mushroom soup and sour cream. Then mix in about half of the shredded cheese.
- Add the cooked beef to the crock pot. Pour the creamy mixture over it and stir to combine.
- Arrange frozen tater tots on top in a single layer.
Cooking
- Cover and cook on LOW for 4 to 6 hours, until hot and bubbly.
- During the last 15 to 25 minutes, sprinkle the rest of the cheese on top and cover to let it melt.
- For extra crispiness, transfer to the oven or broil briefly.
Notes
For a variation, you can add veggies or swap the protein. To keep tots from getting too soft, add them for the last hour of cooking. Store leftovers for up to 3-4 days in the fridge.
