Preparation
- Preheat the oven to 375°F (190°C).
- Butterfly the flank steak to create an even surface for rolling.
- Pound the steak to an even thickness, ensuring it is strong enough to contain the filling.
- Season the steak with salt and pepper.
- In a bowl, mix together the chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, salt, and pepper until well combined.
Assembly and Cooking
- Spread the spinach filling evenly over the flank steak, leaving edges clear to seal.
- Starting at one end, carefully roll the steak tightly around the filling.
- Secure the roll with kitchen twine or skewers.
- Place the roll in a baking dish and cook for 30-40 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let rest for 10 minutes before slicing.
- Slice into pinwheels and serve.
Notes
For best results, use fresh spinach, ensure filling is not too wet, and secure the roll well to prevent leakage during cooking. Pair with roasted potatoes or a crisp salad for a complete meal.
