  • 1 tablespoon Sugar Adjust to taste, but not too much
  • 1 tablespoon Baking powder Essential for scones to rise
  • 1/2 teaspoon Salt Just a small pinch for big results
  • 1/2 cup Unsalted butter Keep cold for best results
  • 1 cup Heavy cream Adds richness
  • 1 large Egg Bind the ingredients together
  • 1/2 cup Dried cranberries or currants Optional for added sweetness

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. Cut the cold butter into the flour mixture until it resembles coarse crumbs.
  4. Stir in the heavy cream and beaten egg until just combined.
  5. If using, fold in dried cranberries or currants.
  6. Pat the dough into a circle, about 1 inch thick. Cut into wedges.
  7. Place the dough wedges on a baking sheet.
Baking
  1. Bake in preheated oven for about 15 minutes or until golden brown.

Notes

For extra crunch, brush the tops with cream and sprinkle with coarse sugar before baking. You can customize by adding chocolate chips, nuts, or even cheese for a savory twist. To freeze, shape the scones and place them on a baking sheet to freeze before transferring to a zip-lock bag for later baking.
