Preparation
- Preheat the oven and prepare three 8-inch cake pans with parchment paper.
- In one bowl, mix the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the wet ingredients: eggs, buttermilk, oil, and vanilla extract.
- Combine wet and dry ingredients, then slowly stir in hot espresso until well mixed.
Baking
- Divide the batter evenly among the prepared pans and bake.
- Check doneness by inserting a toothpick; it should come out with a few moist crumbs, not wet batter.
- Let cool in pans for 10 minutes before transferring to cooling racks to cool completely.
Assembly
- Level the cake layers and chill in the fridge for 20-30 minutes.
- Using a piping bag, create a frosting dam on the first layer and add filling if desired.
- Stack the layers and repeat the process.
- Apply a crumb coat and chill for 15 minutes.
- Complete with a final coat of frosting, smooth or rustic.
Notes
This cake can be made ahead. Cake layers can be baked the night before and frosted the next day for optimal flavor. Store wrapped tightly to keep fresh.
