Ingredients

Main Ingredients
  • 4 pieces bone-in chicken pieces (legs, thighs, or a mix) Dark meat is preferable for juiciness.
  • 1 cup pitted prunes Adds sweetness and flavor.
  • 1/2 cup green olives Provide a salty, savory note.
  • 2 tablespoons capers Adds a bright, briny zing.
  • 1 cup chicken broth Use low sodium for better control over saltiness.
  • 1/3 cup olive oil For cooking and flavor.
  • 1/4 cup red wine vinegar Provides acidity to balance flavors.
  • 1/2 cup brown sugar Contributes sweetness to the sauce.

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together olive oil, red wine vinegar, and brown sugar.
  3. Add chicken pieces to the bowl, coat them well with the marinade, and set aside for at least 30 minutes.
Cooking
  1. Place marinated chicken in a roasting pan and scatter prunes, olives, and capers on top.
  2. Pour chicken broth over the chicken.
  3. Bake in the preheated oven for 45-60 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  4. Baste the chicken with the sauce occasionally during cooking.
Serving
  1. Let the chicken rest for 10 minutes before serving.
  2. Serve with rice, couscous, or roasted potatoes.

Notes

For best results, choose dark meat chicken to maintain moisture. The sauce can be adjusted for sweetness with more or less sugar, based on personal taste.
