Preparation
- Preheat your oven to 350°F (175°C). Lightly grease a casserole dish.
- Boil the noodles in salted water and cook them just until barely tender. Drain and set aside.
- In a large skillet, cook the ground beef with the onion until browned. Drain off excess grease if needed. Add garlic and cook for about 30 seconds.
- Stir in tomato sauce, diced tomatoes if using, and seasonings. Let it simmer for 3 to 5 minutes.
- Turn off the heat. Stir in sour cream and about 1 and a half cups of the cheese.
- Fold in the noodles. If it seems dry, add a splash of broth or water.
- Pour into the casserole dish, top with the remaining cheese, and bake for about 20 minutes.
- For a browner cheese top, broil for 1-2 minutes but watch it closely.
- Let it sit for 5 to 10 minutes before serving.
Notes
Can be prepped in advance; refrigerate before baking or freeze up to 2 months. Store leftovers in airtight containers for 3-4 days. Reheat in microwave or oven, adding moisture if needed.
