Cheesy Ground Beef Noodle Casserole

  • 1 pound ground beef
  • 10-12 ounces egg noodles or similar pasta Alternative pastas include rotini or penne.
  • 1 small onion, chopped Optional but recommended.
  • 2-3 cloves garlic, minced
  • 1 can tomato sauce (about 15 ounces)
  • 1 can diced tomatoes, optional Use if you prefer a chunkier texture.
  • 1 cup sour cream or plain Greek yogurt Greek yogurt can be used as a substitute.
  • 2 cups shredded cheese (cheddar or a blend) Reserve some for topping.
  • Salt, pepper, and Italian seasoning To taste.
  • splash beef broth or water If the sauce looks too thick.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Lightly grease a casserole dish.
  2. Boil the noodles in salted water and cook them just until barely tender. Drain and set aside.
  3. In a large skillet, cook the ground beef with the onion until browned. Drain off excess grease if needed. Add garlic and cook for about 30 seconds.
  4. Stir in tomato sauce, diced tomatoes if using, and seasonings. Let it simmer for 3 to 5 minutes.
  5. Turn off the heat. Stir in sour cream and about 1 and a half cups of the cheese.
  6. Fold in the noodles. If it seems dry, add a splash of broth or water.
  7. Pour into the casserole dish, top with the remaining cheese, and bake for about 20 minutes.
  8. For a browner cheese top, broil for 1-2 minutes but watch it closely.
  9. Let it sit for 5 to 10 minutes before serving.

Notes

Can be prepped in advance; refrigerate before baking or freeze up to 2 months. Store leftovers in airtight containers for 3-4 days. Reheat in microwave or oven, adding moisture if needed.
