Ingredients
  

For the Sauce
  • 1 cup sweet chili sauce For mellow heat and sticky texture.
  • 3 tablespoons soy sauce Use low sodium if sensitive to salt.
  • 2 tablespoons fresh lime juice For acidity and freshness.
  • 3 cloves minced garlic For warm kick and fragrance.
  • 1 tablespoon minced ginger For warm kick and fragrance.
  • 1 teaspoon chili paste Adjust to taste for heat.
  • 1 teaspoon brown sugar or honey If the chili sauce is very tangy.
  • 1 tablespoon toasted sesame oil For a nutty finish.
  • 1 tablespoon cornstarch To help the sauce cling to noodles.
Main Ingredients
  • 1 pound thinly sliced beef (flank or sirloin) Sliced against the grain.
  • 1 pound large shrimp, peeled and deveined Patted dry for better searing.
  • 8 ounces cooked rice noodles or udon Cooked slightly underdone.
  • 1 cup sliced bell pepper For added flavor.
  • 1 cup snap peas Add crunch and color.
  • 1 medium onion, thinly sliced For flavor.
  • 2 tablespoons neutral oil For cooking at high heat.
  • 2 tablespoons scallions, chopped for garnish Add freshness.
  • 2 tablespoons cilantro, chopped for garnish For freshness.
  • 1 tablespoon sesame seeds, for garnish Optional for extra texture.
  • 1 lime, cut into wedges fresh lime, for serving For serving.

Method
 

Preparation
  1. Mix all sauce ingredients in a bowl and set aside.
  2. Prepare all ingredients and have them ready before cooking.
Cooking
  1. Heat a wok or large skillet over high heat and add a thin layer of oil.
  2. Add the sliced beef and sear for 2-3 minutes until browned, then remove to a plate.
  3. In the same pan, add more oil if necessary and cook shrimp for 60-90 seconds per side until opaque, then remove.
  4. Add bell peppers and snap peas to the pan with a pinch of salt, cooking for about 2 minutes until crisp-tender.
  5. Add the cooked noodles to the pan and toss to warm through. Add a splash of water to loosen if needed.
  6. Pour the prepared sauce over the noodles and toss to coat until it thickens.
  7. Return the beef and shrimp back into the pan, tossing until everything is shiny and well-coated.
  8. Remove from heat, squeeze fresh lime over and garnish with scallions, cilantro, and sesame seeds. Serve hot.

Notes

For best results, prep shrimp by patting them dry and optionally soaking in salt water for plumper texture. Keep the heat high and move quickly during cooking.
