  • 4 large Eggs Whipped with sugar for lift.
  • 1 cup Sugar Provides sweetness and structure.

  • 1/3 cup Unsweetened cocoa powder Gives a deep chocolate flavor.
  • 1/4 cup Butter, melted Keeps the cake flexible.
  • 1/2 teaspoon Salt Enhances chocolate flavor.
  • 1 teaspoon Vanilla extract Adds flavor.
Filling Ingredients
  • 1 cup Cold heavy cream Whipped to soft peaks.
  • 2 tablespoons Powdered sugar For sweetening the filling.
  • 1 teaspoon Vanilla extract Flavor for the filling.
  • optional Mascarpone cheese or instant pudding mix For a sturdier filling.
Frosting and Toppings
  • 1 cup Chocolate frosting or ganache For outer layer.
  • optional Sugared cranberries, rosemary sprigs, chocolate shavings For decoration.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line a rimmed sheet pan with parchment paper and lightly grease it.
  2. In a bowl, whip eggs with sugar until pale and thick, forming a ribbon when lifting the whisk.
  3. Sift together flour, cocoa powder, salt, and baking powder. Gently fold into the egg mixture to maintain air.
  4. Drizzle in the cooled melted butter and fold gently.
Baking
  1. Spread the batter evenly in the prepared pan. Bake for 10 to 12 minutes until the cake springs back when lightly pressed.
Rolling and Cooling
  1. Dust a clean towel with powdered sugar. Flip the hot cake onto the towel, peel off the parchment, and roll it with the towel inside. Let it cool.
Filling and Assembling
  1. Whip cold heavy cream with powdered sugar and vanilla to soft peaks. Optionally mix in mascarpone for stability.
  2. Unroll the cooled cake, spread the filling evenly, and carefully roll back up without the towel.
Frosting
  1. Cover the rolled cake with chocolate frosting or ganache and texture it with a fork to resemble bark.
Chill and Serve
  1. Chill the assembled cake for at least 45 minutes before slicing.

Notes

Avoid overbaking to prevent cracks. Roll the cake while warm for best results. Decorate with powdered sugar and other festive garnishes for a holiday touch.
