Ingredients

Main Ingredients
  • 1 pound Ground beef or ground turkey Choose based on preference.
  • 1 packet Taco seasoning Store-bought or homemade.
  • 12 wrappers Wonton wrappers The square ones work best.
  • 1 cup Shredded cheese Cheddar, Mexican blend, or pepper jack.
  • 1 cup Refried beans or black beans Optional, but adds a nice layer.
  • 1 tablespoon Cooking spray or oil For muffin tin.
Topping Ideas
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 cup Sour cream
  • 1 cup Salsa Serve on the side.
  • 1 cup Sliced jalapenos
  • 1 cup Chopped cilantro
  • 1 lime Lime wedges For squeezing over tacos.
  • 1 avocado Avocado Diced or made into guacamole.

Method

Preparation
  1. Heat your oven to 375°F (190°C). Lightly spray a muffin tin.
  2. Press one wonton wrapper into each muffin cup to form a bowl shape.
  3. Bake the empty wrappers for about 5 to 6 minutes until lightly golden.
  4. While they bake, cook your ground meat in a skillet. Drain excess grease and add taco seasoning and a splash of water. Simmer for a couple of minutes.
  5. Pull the muffin tin out. If using beans, add about a teaspoon to each cup first.
  6. Add the taco meat and sprinkle cheese over the top.
  7. Bake again for about 5 to 7 minutes until the cheese melts and edges are crisp.
  8. Let cool for a few minutes, then top with your choice of toppings.

Notes

Do not overfill the taco cups to prevent spillage. For make-ahead convenience, cook the meat earlier and assemble just before serving.
