Making the Sauce
- In a small saucepan, melt 2 tablespoons butter over medium heat.
- Add 2 to 3 cloves of minced garlic and cook for about 30 seconds, just until it smells amazing. Do not let it brown.
- Whisk in 2 tablespoons flour and cook for 30 to 60 seconds to avoid a raw taste.
- Slowly pour in 1 cup milk while whisking to keep it smooth.
- Let it gently bubble for 2 to 4 minutes while whisking often until it coats a spoon.
- Turn off the heat and stir in 1/2 cup grated Parmesan and add salt and pepper to taste.
Notes
If the sauce thickens too much, add a tablespoon of milk to loosen it. If it's too thin, let it simmer for another minute. Store in the fridge for up to 4 days or freeze for up to 2 months.
