  • 16 ounces good quality white chocolate Bars melt smoother, if using chips, add a teaspoon of neutral oil for silkiness.
  • 2 cups mini marshmallows Try using larger ones chopped if preferred.
  • 1.5 cups crushed biscuits or cookies Options include shortbread, digestive biscuits, or graham crackers.
  • 1 cup dried fruit Cranberries, cherries, apricots, or raisins are great choices.
  • 1 cup nuts Consider almonds, pistachios, or pecans; toast them for more flavor.
  • 1 teaspoon vanilla extract Optional but enhances flavor.
  • 1 pinch salt Optional for balancing sweetness.

Method
 

Preparation
  1. Line an 8 or 9 inch square pan with parchment paper for easy lifting.
  2. Chop nuts and dried fruit, and lightly crush cookies into bite-size pieces.
Melting Chocolate
  1. Melt the white chocolate using the microwave in 20-30 second bursts, stirring in between until smooth.
  2. If very thick, add a teaspoon of neutral oil to loosen.
Mixing
  1. Stir in vanilla extract and a pinch of salt.
  2. Fold in marshmallows, crushed cookies, dried fruit, and nuts gently to avoid crushing.
Setting
  1. Pour the mixture into the prepared pan and press it in lightly to do not compact it too much.
  2. Chill in the fridge for about 45 minutes to 1 hour, or freeze for 20 minutes.
Serving
  1. Lift out of the pan using the parchment, let sit for 5-10 minutes at room temperature before slicing.
  2. Use a warm knife for clean cuts.

Notes

Store in an airtight container at room temperature for up to a week or refrigerate if it’s warm. It freezes well for up to 2 months. For gifting, add parchment between layers.
