  • 2 oz simple syrup Adjust based on coconut cream sweetness.
  • 1 cup fresh mint leaves Bruise lightly to release oils.
Toppings
  • 2 cups club soda or sparkling coconut water Add bubbles as a topper.
  • 1 sprig fresh mint For garnish.
  • 1 slice lime For garnish.
  • 1/4 cup shredded coconut For garnish.
  • a handful pomegranate arils For festive garnish.

Method
 

Preparation
  1. In a pitcher, mix white rum, fresh lime juice, coconut cream or milk, and simple syrup.
  2. Bruise fresh mint leaves and add them to the pitcher just before serving.
  3. Chill glasses to ensure the drink stays refreshing.
Serving
  1. Fill glasses with ice.
  2. Pour the mojito base over the ice.
  3. Top with club soda or sparkling coconut water.
  4. Garnish with fresh mint, a lime slice, shredded coconut, and pomegranate arils.

Notes

For a non-alcoholic version, replace rum with coconut water. Chill your glasses for a smoother drink. Experiment with coconut cream or milk based on your desired richness.
