  • 4 cups Fresh watermelon, cubed (seedless is easier) Make sure it's ripe for the best flavor.
  • 1/2 cup Fresh lemon juice Juice from about 3-4 lemons.
  • 1/4 cup Fresh mint leaves Can be adjusted to taste.
  • 1/4 cup Simple syrup or honey Optional, based on the sweetness of watermelon.
  • 4 cups Cold water, sparkling water, or lemon lime soda Use sparkling for a more festive drink.
  • 1 pinch Salt Enhances the flavors.
  • Ice as needed Ice For serving and chilling.

Method
 

Preparation
  1. Blend the watermelon cubes until smooth. If desired, strain through a fine mesh strainer for a smoother punch.
  2. Juice your lemons and add the lemon juice to the blended watermelon juice. Stir well.
  3. Add mint to the mixture. For a stronger mint flavor, you can muddle it gently in the bottom of the pitcher before adding the juice.
  4. Sweeten the mixture by adding simple syrup or honey gradually, tasting as you go.
  5. Add a tiny pinch of salt to enhance the flavors.
  6. Chill the mixture in the refrigerator for at least 30 minutes for the best flavor.
  7. Just before serving, add the sparkling water or soda to keep it fizzy.

Notes

For a boozy version, add vodka, rum, or tequila to taste. If making ahead, store the watermelon and lemon base separately from the mint and bubbles to keep flavors bright. Serve in clear glasses with lemon slices and mint for decoration.
