  • 1 large Watermelon, seedless Cut into bite size cubes or triangles
  • 8 oz Feta cheese Crumbled or cut into small chunks, preferably in brine
  • 1/2 cup Fresh mint Torn or sliced thin
  • 1 small Red onion Thin sliced, optional
  • 1 cup Cucumber Optional for extra crunch
  • 1/4 cup Toasted pistachios or almonds Optional for texture
For the Dressing
  • 3 tbsp Olive oil For drizzling
  • 2 tbsp Fresh lime juice Can substitute with lemon
  • 1 tsp Honey Optional, for sweetness
  • 1/4 tsp Salt Use sparingly, feta is already salty
  • 1/4 tsp Black pepper

Method
 

Preparation
  1. Cut the watermelon into bite size cubes, making them fairly similar for easy eating. If the watermelon is extra juicy, let the cubes sit in a colander for 5 to 10 minutes to drain.
  2. Prepare the mint by tearing bigger leaves and thinly slicing the smaller ones. Avoid chopping too aggressively to prevent bruising.
  3. Add feta last, gently folding it into the salad to retain some creamy crumbles and bigger salty bites.
Assembly
  1. Drizzle the dressing over the salad, tossing lightly just once or twice and stopping to avoid making it too watery.
  2. Chill the salad in the fridge for about 10 minutes before serving if possible, to enhance the flavors.
  3. If serving at a party, toss in the mint just before serving to keep it looking fresh.

Notes

This salad is flexible; feel free to customize it with additional ingredients like crushed red pepper for heat or different herbs. Pair it with grilled items for a balanced meal.
