  • 4-5 cups cubed seedless watermelon (cold is best) Slightly overripe watermelon works well.
  • 1/2 cup fresh lemon juice (about 3 to 4 lemons) Fresh lemon juice is recommended for best flavor.
  • 2-4 tablespoons honey or simple syrup Start with a small amount, adjust to taste.
  • 6-10 leaves basil leaves, plus extra for garnish Clapping the leaves releases their aroma.
  • 2-3 cups sparkling water (chilled) Add just before serving to keep it bubbly.
  • Ice Ice For serving cold.
  • Optional: thin lemon slices, extra watermelon wedges For garnish.

Preparation
  1. Blend the watermelon. Toss the watermelon cubes into a blender and blend until totally smooth.
  2. Strain if you desire a smoother drink. Strain through a fine mesh sieve into a pitcher.
  3. Stir in the fresh lemon juice and honey or simple syrup. Adjust sweetness and tartness to your preference.
  4. Release the basil aroma by clapping the leaves between your hands, then add them to the pitcher and stir. Let it sit for 5 minutes.
  5. Just before serving, gently stir in chilled sparkling water to maintain fizz.
  6. Serve in glasses filled with ice, garnished with basil or lemon slices.

Notes

Chill all components to avoid ice melting too quickly. Sweeten in stages to suit your taste. Avoid overdoing basil to prevent overpowering the drink.
