  • 4 cups Seedless watermelon, cut into bite size cubes or small triangles Keep it cold for better flavor.
  • 5 ounces Fresh arugula Dry thoroughly if rinsed.
  • 1 cup Feta cheese, crumbled or cubed Use full block feta for creamier texture.
  • 3 tablespoons Olive oil Use high-quality extra virgin olive oil.
  • 2 tablespoons Fresh lime juice or lemon juice Adjust to taste.
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper To taste.
Optional Add-Ins
  • 1 cup Cucumber, sliced For extra crunch and hydration.
  • ¼ cup Red onion, thinly sliced Use sparingly for sharpness.
  • 1 cup Nuts (toasted pistachios, almonds, or sunflower seeds) For added crunch.
  • 1 cup Grilled chicken or shrimp To make it heartier.
  • 1 cup Herbs (fresh mint, basil, cilantro, or dill) To taste, pick one herb for best flavor.

Method
 

Preparation
  1. Cut the watermelon into bite-sized cubes or small triangles.
  2. Dry the arugula thoroughly, especially if rinsed.
Dressing
  1. In a small bowl, whisk together olive oil, fresh citrus juice, salt, and black pepper. Adjust seasoning to taste.
Assemble
  1. In a large bowl, place the arugula, add the watermelon, and scatter feta on top.
  2. Drizzle with dressing lightly and toss very gently to avoid breaking the watermelon pieces.
  3. Taste and adjust seasoning with salt if needed.

Notes

Keep dressing on the side until serving for best texture. Use chilled watermelon and dry arugula to prevent sogginess.
