Ingredients
  

For the whipped feta
  • 6 to 8 ounces feta cheese Use block feta in brine for the best taste.
  • 2 to 4 tablespoons Greek yogurt Can substitute with a splash of cream.
  • 1 to 2 tablespoons olive oil Use a fruity extra virgin olive oil.
  • 1 squeeze lemon juice Optional but recommended for flavor.
  • to taste twists black pepper Freshly cracked for best flavor.
For the salad
  • 2 cups cucumbers, chopped No need to peel, unless the skin is thick.
  • 2 cups tomatoes, chopped Use ripe but firm tomatoes.
  • to taste tablespoons olive oil, for drizzling Add before serving for the best texture.

Method
 

Prepare the whipped feta
  1. Combine feta, Greek yogurt, olive oil, lemon juice, and black pepper in a food processor or blender.
  2. Blend until creamy. If too thick, add additional yogurt or a splash of water.
  3. Taste and adjust lemon and pepper to your preference.
  4. For a fluffier texture, blend a bit longer.
Assemble the salad
  1. In a large bowl, combine chopped cucumbers and tomatoes.
  2. Add a few spoons of the whipped feta and drizzle generously with olive oil.
  3. Finish with cracked pepper and any herbs if desired.

Notes

This salad is a great side for meats and bold flavors. Pair with grilled chicken or serve alongside tacos. For meal prep, store veggies and whipped feta separately until ready to serve.
