  • 2 large cucumbers (Persian or English) For best results, chill them in the fridge before slicing.
Dressing
  • 2 tbsp soy sauce Use low sodium if desired.
  • 1 tbsp rice vinegar Can substitute with apple cider vinegar.
  • 1 tbsp toasted sesame oil
  • 1 tsp honey or sugar Optional, for a touch of sweetness.
  • 1-2 cloves garlic, grated or very finely minced
  • 1 tsp chili crisp or chili oil Adjust to taste for heat.
  • 1 tbsp sesame seeds
Optional Ingredients
  • sliced green onions For garnish.
  • a spoon of peanut butter For a creamy version.
  • a squeeze of lime For an extra tangy flavor.

Method
 

Preparation
  1. Slice the cucumbers into coins, half moons, or long spears.
  2. Add cucumbers to a container with a lid.
Mixing the Dressing
  1. Pour in soy sauce, vinegar, sesame oil, honey or sugar (if using), garlic, chili crisp, and sesame seeds.
  2. Cover and shake for about 20 seconds, then taste and adjust flavors.
Marinating
  1. Let it sit for 5 to 10 minutes to allow the cucumbers to soak up the flavor.
Serving
  1. Serve cold, either straight from the container or as a side dish.

Notes

You can customize the salad by adding more ingredients based on your preference. It can be made ahead of time, but it will get juicier as it sits.
