  • 1 cup unsalted butter, softened very soft but not melted
  • 3 to 4 cups powdered sugar, sifted if lumpy
  • 2 to 3 tablespoons milk or heavy cream add slowly for desired consistency
  • 2 teaspoons vanilla extract use good quality if possible
  • 1 pinch salt adds depth of flavor

Method
 

Preparation
  1. Beat the softened butter for about 2 minutes until it looks lighter and fluffy.
  2. Add powdered sugar in batches, usually 1 cup at a time, mixing on low at first to avoid a sugar cloud.
  3. Add vanilla and a pinch of salt; the mixture will look thick and a bit stiff.
  4. Add milk or cream slowly, 1 tablespoon at a time, until it looks spreadable and smooth.
  5. Beat for another 30 to 60 seconds to make it extra fluffy. Taste and adjust with more salt or vanilla as needed.

Notes

If too thick, add more milk. If too thin, add more powdered sugar. For storage, keep in the fridge for 5 to 7 days or freeze for up to 2 months. Re-whip before use.
