Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Salt
Wet Ingredients
  • 1/2 cup Unsalted butter, softened
  • 1 cup Sugar
  • 3 large Eggs Use room temperature
  • 1/2 cup Milk or coconut milk
  • 1/2 cup Ube halaya (ube jam) Provides depth of flavor
  • 1 teaspoon Ube extract Boosts aroma and color

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Mix in the ube halaya and ube extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk, starting and ending with the flour.
Baking
  1. Pour the batter into a prepared cake pan.
  2. Bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.
Cooling and Serving
  1. Let the cake cool completely before frosting.
  2. Frost with your choice of frosting, such as cream cheese, whipped cream, or buttercream.

Notes

For a richer flavor, consider using coconut milk and extra ube halaya. Customize frosting based on your preference.
