  • 1 cup Greek yogurt (full fat or 2 percent) Full fat is creamier and more flavorful.
  • 1 medium English cucumber Grated and water squeezed out.
  • 1 clove Garlic Minced; start with a small amount.
  • 1 tablespoon Fresh lemon juice For brightness.
  • 1 tablespoon Olive oil For richness.
  • 2 tablespoons Dill or mint Dill is classic; mint is refreshing.
  • to taste Salt Do not skip; enhances flavor.
  • to taste Pepper Also enhances flavor.

Method
 

Preparation
  1. Grate the cucumber using the large holes on a box grater.
  2. Place grated cucumber in a clean kitchen towel and squeeze out excess water over the sink until it stops dripping.
  3. In a bowl, stir together Greek yogurt, squeezed cucumber, minced garlic, lemon juice, olive oil, chopped dill (or mint), salt, and pepper.
  4. Taste the mixture and adjust the flavors, adding more lemon, salt, or garlic as desired.
  5. If possible, chill the tzatziki in the fridge for 20 to 30 minutes to let the flavors meld.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. If it separates, stir it back together. Avoid freezing as it may alter the texture.
