Tropical Fruit Popsicles

Ingredients
  

Main Ingredients
  • 1 whole ripe mango, peeled and chopped
  • 1 cup pineapple, chopped (fresh is best, but frozen works)
  • 1 whole banana (optional, for creaminess)
  • 0.5 cup orange juice or coconut water
  • 2-3 tablespoons plain yogurt or Greek yogurt (optional)
  • 1-2 teaspoons honey or maple syrup (only if your fruit is not sweet)
  • 1 squeeze lime small but powerful
Equipment
  • Popsicle molds or small paper cups, plus sticks
  • Blender

Method
 

Preparation
  1. Add all ingredients to the blender and blend until smooth.
  2. Taste the mixture. If it needs more brightness, add lime. If it needs more sweetness, add honey.
  3. Pour the mixture into molds and place them in the freezer.
  4. For a chunkier texture, keep a few small fruit pieces aside and drop them into the molds before pouring.
Freezing
  1. Freeze for 5 to 7 hours, or overnight for best results.
  2. If using paper cups, cover the top with foil before inserting the sticks.
Serving
  1. To unmold, run warm water over the outside of the mold for 10 to 20 seconds.

Notes

These popsicles are best enjoyed within 2 to 3 weeks. If you have leftover blended fruit mix, pour it into an ice cube tray for later use.
