Tri Tip Roast (Oven or Grill)

Ingredients
  

For the rub
  • 1 tablespoon kosher salt 1 to 1.5 tablespoons, adjust to taste
  • 1 tablespoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika optional, but great
Main ingredients
  • 1 piece tri tip roast about 2 to 3 pounds
  • 1 tablespoon olive oil 1 to 2 tablespoons to coat the roast

Method
 

Preparation
  1. Pat the roast dry and rub it with olive oil.
  2. Mix the seasonings and coat the roast well, including the sides.
  3. If time allows, let it sit in the fridge for a few hours or overnight; if not, let it sit on the counter for about 30 minutes while your oven or grill heats up.
Cooking (Oven Method)
  1. Preheat the oven to 425°F.
  2. Put a skillet or oven-safe pan in the oven while it heats for a stronger crust.
  3. Sear the tri tip in a hot pan for 2 to 3 minutes per side.
  4. Roast until it reaches 125 to 130°F for medium rare or 135 to 140°F for medium, usually 20 to 35 minutes depending on thickness.
  5. Rest for 10 to 15 minutes, then slice thin against the grain.
Cooking (Grill Method)
  1. Heat your grill for two-zone cooking: one side medium-high, one side medium or low.
  2. Sear the roast over the hotter side first, then move it to the cooler side and close the lid.
  3. Cook until it reaches the same temperatures as above, then rest and slice thin.

Notes

Save the drippings for added flavor. Always slice against the grain for best texture.
