Preparation
- Bake or prep your crust. If your crust is not baked yet, bake it first and allow it to cool completely.
- Toast the coconut by spreading shredded coconut on a baking sheet and baking at 325°F, stirring every few minutes until golden. Watch closely to prevent burning.
Making the Creamy Filling
- In a saucepan, whisk together sugar, cornstarch, and a pinch of salt.
- Slowly whisk in the whole milk and coconut milk. Warm over medium heat, whisking often, until it begins to thicken.
- In a bowl, whisk the egg yolks. Spoon in a little of the warm milk mixture while whisking, then pour the yolk mixture back into the saucepan. Keep whisking until thickened to a pudding-like texture.
- Turn off the heat and stir in butter, vanilla, and a handful of toasted coconut. Pour the filling into the cooled crust.
Chilling and Finishing
- Press plastic wrap directly onto the surface of the filling to prevent skin from forming. Chill for at least 4 hours, preferably overnight.
- Right before serving, add whipped cream and sprinkle with the remaining toasted coconut.
Notes
For smooth filling, use medium heat and steady whisking. Chill the pie thoroughly for clean slices. Add a pinch of flaky salt on top of the whipped cream before serving to enhance the sweetness.
