Preparation
- Cook the noodles according to package instructions. Drain and rinse under cold water to stop cooking.
- In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, sweetener, garlic, and sriracha until smooth. Adjust with warm water as needed.
- In a large bowl, combine cooked noodles with half the sauce. Toss to coat.
Assembly
- Add in all the veggies and mix well to combine.
- Serve with remaining sauce on the side and garnish with peanuts, sesame seeds, cilantro, and green onions before serving.
Notes
Store in the refrigerator for up to 2 days. Keep some sauce aside to refresh when serving. Great for meal prep and customizing based on personal preference.
