Ingredients
  

Filling Ingredients
  • 12 pieces Fresh jalapenos Medium to large are easiest to stuff
  • 8 ounces Cream cheese Softened for easier mixing
  • 1 cup Shredded cheddar or pepper jack cheese Use your favorite cheese
  • 1 cup Cooked brisket or pulled pork Optional but enhances flavor
  • 12 slices Bacon Thin to regular cut wraps best
  • BBQ rub or a pinch of salt, pepper, and garlic powder For seasoning the filling
  • BBQ sauce For serving, optional

Method
 

Preparation
  1. Slice each jalapeno lengthwise and scoop out the seeds and white ribs to control the heat level.
  2. In a bowl, mix cream cheese, shredded cheese, and chopped brisket. Adjust the thickness of the mixture so it won't run out when heated.
Filling Jalapenos
  1. Spoon the filling into the jalapenos, filling them smooth and level without spilling over.
Wrapping
  1. Lay a strip of bacon on a cutting board and place the stuffed jalapeno half at one end.
  2. Wrap the bacon around the jalapeno, overlapping slightly. If necessary, secure with a toothpick.
Cooking
  1. Cook in the oven at 400°F for about 25 to 35 minutes, flipping once, or use a grill or smoker as desired.
  2. Ensure bacon is browned and crisp, and the filling is bubbling.
Serving
  1. Let the Texas Twinkies rest for 5 minutes before serving to avoid burns.

Notes

For less spice, soak jalapenos in cold water for 10 minutes before patting dry. Keep cooked Twinkies warm in the oven on low heat for serving.
