Ingredients
  

For the Sweet Potatoes
  • 4 pieces sweet potatoes Medium-sized sweet potatoes
For the Taco Filling
  • 1 pound ground beef, turkey, or chicken Choose your preferred protein
  • 1 small onion Optional, for added flavor
  • 1 packet taco seasoning Store-bought or homemade
  • 1/2 cup corn or black beans Optional, for extra heartiness
  • 1/4 cup water To help mix taco seasoning
Topping Ideas
  • 1 cup shredded cheese Cheddar, Monterey Jack or Mexican blend recommended
  • 1/2 cup sour cream or Greek yogurt For creaminess
  • 1/4 cup chopped green onions
  • 1/2 cup pico de gallo For freshness
  • 1 lime lime juice A squeeze for freshness

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Scrub the sweet potatoes, poke a few holes with a fork, and bake until soft, about 45 to 60 minutes.
  3. If in a hurry, microwave the sweet potatoes first for a few minutes, then finish in the oven.
Making the Taco Filling
  1. While the sweet potatoes bake, cook your protein of choice in a skillet over medium heat.
  2. Add in the diced onion (if using), taco seasoning, and a splash of water to coat everything.
  3. If desired, stir in corn or black beans for extra heartiness.
Assembling
  1. Once the sweet potatoes are done, slice them down the middle and gently mash the inside with a fork to create space for the filling.
  2. Fill the sweet potatoes with the taco filling and top with desired toppings.

Notes

Store leftovers in separate containers for optimal freshness. Best enjoyed within 3 to 4 days. Reheat stuffed sweet potatoes in the microwave, then add fresh toppings.
