Taco Lasagna

  • 1 pound ground beef (or ground turkey)
  • 1 small onion, chopped (optional) optional but good
  • 2-3 cloves garlic, minced
  • 2 tablespoons taco seasoning store bought or homemade
  • 1 can diced tomatoes with green chiles or plain diced tomatoes
  • 1 cup salsa choose your heat level
  • 1 can black beans, drained and rinsed optional
  • 8-10 small flour tortillas (or corn tortillas)
  • 2-3 cups shredded cheese cheddar, Monterey Jack, or a blend
  • 1 cup sour cream optional, for creamier layers
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F. Lightly grease a 9x13 baking dish.
  2. In a skillet, cook the ground beef and onion until the meat is browned. Drain excess grease if there is a lot.
  3. Add garlic, taco seasoning, diced tomatoes, salsa, and beans if using. Let it simmer for about 3 to 5 minutes so it thickens a bit.
Layering
  1. Spread a thin layer of the meat sauce on the bottom of the dish.
  2. Add a layer of tortillas, overlapping them a bit.
  3. Add more meat mixture, then sprinkle cheese.
  4. Add small spoonfuls of sour cream if desired.
  5. Repeat layers until you run out, finishing with a generous cheese layer on top.
Baking
  1. Bake for about 25 to 30 minutes, until hot and bubbly.
  2. If you like a more golden top, broil for 1 to 2 minutes, but keep an eye on it.
  3. Let it rest for 10 minutes before slicing.

Notes

Taco Lasagna keeps well and tastes even better as leftovers. It's flexible; you can swap ground beef for turkey, chicken, or beans. Adjust spice levels according to taste.
