Ingredients
  

For the Potatoes
  • 2 large russet potatoes or 4 to 5 small Yukon Gold
  • 1-2 tablespoons oil (avocado or vegetable)
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt plus more to taste
  • 1 pinch cumin optional
  • 1 pinch black pepper optional
For the Toppings
  • nacho cheese sauce store bought or homemade
  • sour cream
  • shredded cheese cheddar or a Mexican blend
  • green onions optional topping
  • pico optional topping
  • jalapenos optional topping

Method
 

Preparation
  1. Wash and cut your potatoes into small bite size cubes, aiming for around 1/2 inch.
  2. Pat them dry with paper towels.
  3. Toss the potatoes in a bowl with oil and all the spices, making sure each piece gets coated.
Cooking
  1. Air fry at 400 F for about 12 to 16 minutes, shaking the basket a couple times, until browned and tender.
Assembly
  1. Pile the hot potatoes in a bowl, drizzle warm nacho cheese, add a scoop of sour cream, then sprinkle shredded cheese on top. Add optional toppings and serve immediately.

Notes

If cheese sauce is thick, warm it with a splash of milk until pourable. You can also make this in the oven at 425 F if preferred.
