Cookies Base
  • 1 cup unsalted butter, softened to room temperature Use room temperature butter to avoid cracks.
  • 1/2 cup sweetened condensed milk For a creamy texture.
  • 1/2 cup powdered sugar for the dough, plus more for rolling Dusting adds the snowball finish.
  • 1 teaspoon pure vanilla extract
  • 2.25 cups all-purpose flour, spooned and leveled Measure carefully to avoid dry cookies.
  • 1/2 teaspoon fine sea salt Adjust if using salted butter.
  • 3/4 cup very finely chopped pecans or walnuts Optional for added texture.
  • Extra powdered sugar for rolling For final dusting.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Cream the butter with the powdered sugar until light and fluffy using a hand mixer or a sturdy spatula.
  3. Beat in the sweetened condensed milk and vanilla until glossy and slightly thick.
  4. Stir in the flour and salt until the dough comes together. If using nuts, fold them in now.
  5. Scoop the dough into 1-tablespoon portions and roll into smooth balls. Space them 1.5 inches apart on the baking sheets.
Baking
  1. Bake for 11 to 13 minutes until the bottoms are barely golden and the tops look set. Do not wait for browning.
  2. Cool on the sheet for 5 minutes, then roll warm cookies in powdered sugar. Let cool completely on a rack and roll them again in powdered sugar.

Notes

Chill the dough if your kitchen is warm and consider adding a pinch of cinnamon or almond extract for flavor variations.
