Preparation
- Preheat the oven to 400°F (200°C).
- Scrub the sweet potatoes, dry them, poke holes with a fork, and bake until very tender, usually 45 to 60 minutes depending on size.
- Let them cool for 5 to 10 minutes before handling.
- Slice each potato down the middle lengthwise, leaving a little boat shape.
- Scoop out most of the inside into a bowl, leaving a thin border inside the skin.
Mixing and Stuffing
- Mix the warm potato flesh with cream cheese, butter, honey, and a pinch of salt until smooth.
- Spoon the filling back into the potato shells.
Finishing Touch
- Bake the stuffed potatoes for an additional 8 to 12 minutes, until the tops look slightly set and glossy.
- Add any optional toppings before serving.
Notes
For a lighter filling, mix in a spoon of Greek yogurt or cottage cheese with the cream cheese. You can prepare these ahead of time and refrigerate them before reheating.
