  • 2-4 pieces medium sized Japanese sweet potatoes
  • 4 oz cream cheese, softened Soften cream cheese before mixing.
  • 2 tbsp honey Use high-quality honey if possible.
  • 1 tbsp butter For richness.
  • 1 pinch salt Enhances flavors.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Scrub the sweet potatoes, dry them, poke holes with a fork, and bake until very tender, usually 45 to 60 minutes depending on size.
  3. Let them cool for 5 to 10 minutes before handling.
  4. Slice each potato down the middle lengthwise, leaving a little boat shape.
  5. Scoop out most of the inside into a bowl, leaving a thin border inside the skin.
Mixing and Stuffing
  1. Mix the warm potato flesh with cream cheese, butter, honey, and a pinch of salt until smooth.
  2. Spoon the filling back into the potato shells.
Finishing Touch
  1. Bake the stuffed potatoes for an additional 8 to 12 minutes, until the tops look slightly set and glossy.
  2. Add any optional toppings before serving.

Notes

For a lighter filling, mix in a spoon of Greek yogurt or cottage cheese with the cream cheese. You can prepare these ahead of time and refrigerate them before reheating.
