  • 1 medium sweet potato Look for medium sweet potatoes that feel heavy. Orange flesh is classic, but white or purple works too.
  • 2-3 tablespoons cream cheese Full fat is the creamiest, reduced fat works but melts thinner.

Method
 

Cooking the Sweet Potato
  1. Microwave: Scrub the sweet potato, poke it 6 to 8 times with a fork, and microwave for 5 minutes. Flip it, then microwave for another 2 to 5 minutes until soft.
  2. Oven: Bake at 400°F for about 45 to 60 minutes until a knife slides in easily.
Preparing the Stuffed Potato
  1. Slice the potato down the center lengthwise without cutting all the way through.
  2. Fluff the inside with a fork to create space for the cream cheese.
  3. Add 2 to 3 tablespoons of cream cheese into the hot center.
  4. Let it sit for about 60 seconds to melt, then swirl with a fork to mix.

Notes

Serve with a pinch of salt on top to enhance flavors. For added flavor, consider cinnamon, honey, chopped nuts, or everything bagel seasoning as toppings.
