Preparation
- Bake sweet potatoes until very soft, then let them cool.
- Peel and mash the sweet potatoes until smooth. Optionally, blend for a silkier texture.
- Mix in melted butter and brown sugar, then add eggs, milk, vanilla, cinnamon, and nutmeg.
- Taste the filling and adjust sweetness and spice if necessary before adding eggs.
Assembling and Baking
- Chill the pie crust for 20-30 minutes before baking.
- Preheat the oven to 350°F (175°C).
- Pour the pie filling into the prepared pie crust.
- Bake for about 50-60 minutes or until the center jiggles slightly but is set.
Cooling
- Let the pie cool at room temperature before serving.
Notes
This pie is freezer-friendly. To freeze, let it cool completely, wrap tightly in plastic wrap and foil, and freeze for up to 2 months. For slices, wrap individually and store in a freezer bag. Thaw in the fridge overnight or heat slices in the oven.
