Ingredients
  

Pie Crust
  • 1 piece unbaked 9 inch pie crust Homemade or store-bought
Filling
  • 2 cups mashed sweet potato (about 2 to 3 medium sweet potatoes) Cooked and mashed sweet potatoes
  • 1/2 cup melted butter
  • 3/4 cup brown sugar Reduce to 1/2 cup for less sweetness
  • 2 large eggs
  • 1/2 cup evaporated milk Can substitute with whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • a pinch salt

Method
 

Preparation
  1. Step 1: Cook the sweet potatoes. You can bake them, boil them, or air fry them. Baking gives the best flavor, in my opinion. Bake at 400°F until totally soft, usually 45 to 60 minutes depending on size.
  2. Step 2: Mash until smooth. Let them cool a bit, peel, then mash. For super smooth filling, use a hand mixer for 20 to 30 seconds. Do not overdo it.
Mixing the Filling
  1. Step 3: In a bowl, whisk butter and sugar, then add eggs, milk, vanilla, spices, and salt. Stir in mashed sweet potato until smooth.
Baking
  1. Step 4: Pour filling into the unbaked crust. Bake at 350°F for about 50 to 60 minutes. Start checking around 45 minutes.
Cooling
  1. Step 5: Let the pie cool at room temperature, then chill if you want clean slices.

Notes

Sweet Potato Pie is even better when made ahead; the flavor settles and texture firms up. Ideal to bake 1-2 days in advance or freeze for later. The pie lasts about 4 days in the fridge, covered.
