Sweet Potato Casserole with Pecan Streusel

Ingredients
  

For the Sweet Potato Filling
  • 4 cups Mashed sweet potatoes You can boil, roast, or microwave them.
  • 1/2 cup Unsalted butter Melted.
  • 3/4 cup Brown sugar Can reduce by a third if desired.
  • 1 teaspoon Ground cinnamon
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 1/2 cup Milk or cream
  • 2 large Eggs Helps to set the filling.
For the Pecan Streusel Topping
  • 1 cup Chopped pecans
  • 1/2 cup All-purpose flour
  • 1/2 cup Brown sugar
  • 1/4 teaspoon Salt
  • 1/4 cup Unsalted butter Melted.
Optional Marshmallow Topping
  • 2 cups Mini marshmallows For topping, add during the last 8-12 minutes of baking.

Method
 

Prepare the Sweet Potato Filling
  1. Cook and mash the sweet potatoes, then mix in the melted butter, brown sugar, cinnamon, salt, vanilla, milk or cream, and eggs.
  2. Spread the mixture in a 9x13 inch baking dish.
Make the Pecan Streusel Topping
  1. In a bowl, mix together the chopped pecans, flour, brown sugar, salt, and melted butter until it looks like damp sand with clumps.
Assemble and Bake
  1. Sprinkle the pecan streusel topping evenly over the sweet potato filling.
  2. Bake the casserole in a preheated oven at 350°F (175°C) for about 45-60 minutes, until hot and the topping is golden.
  3. If using marshmallows, add them during the last 8-12 minutes of baking and optionally switch to broil for extra browning.
  4. Let the casserole rest for 10-15 minutes before serving.

Notes

This casserole can be made ahead of time by preparing the filling and streusel separately and refrigerating. To reheat, do so in the oven to keep the topping crunchy.
